Both cockpit and SOTs kayaks are suitable for kayak touring. It will affect your gear planning however. E.g., you need to strap your gear for SOTs, while you can just chuck your gear inside cockpits. SOTs are open to the elements while you are protectd inside a cockpit. SOTs are ideal for snorkelling for if you are island-hoping then it will be a star choice. On the other hand if you want to do kayak touring in different parts of the world, a folding kayak becomes a consideration.

Eventually your choice will depend on what you want to do with your kayak.  Hope this helps ! :)
